Ingredients needed are:

  • 2 tsp. Olive oil
  • 3/4 lbs. Fresh chorizo, casings removed
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 (15-ounce) can Black Beans, rinsed
  • 8 oz. Tortilla chips
  • 10 oz. Sharp Cheddar or pepper Jack cheese, grated (about 2.5 cups)
  • 1/2 small head iceberg lettuce, shredded
  • 3/4 cup (metric). Fresh salsa
  • 1 avocado, chopped
  • fresh cilantro
  • pickled jalapenos
  • sour cream

A large rimmed baking sheet with parchment paper, large skillet, wooden spoon, pan.

Method:

  1. Preheat the oven to 400°F. Place a large rimmed baking sheet with parchment paper and heat oil in a large skillet over medium flame.
  2. In the skillet, add chorizo, onion, and garlic and cook. Break the chorizo into pieces with a wooden spoon, and let it cook until brown in color for about 6-8 minutes.
  3. Add beans to it, and cook until warm for about 2-4 minutes.
  4. On a pan, add chips and spread the chorizo mixture over chips and sprinkle with cheese.
  5. Bake the mixture, until the cheese is melted and the chips are fully toasted, for about 10-12 minutes.
  6. You can add toppings, such as lettuce, salsa, avacado, cilantro, jalapenos, and sour cream.

2. Crispy Loaded Hasselback Potato Bites:

Serves: 10-15; depending on number of potatoes. Cooking time : 30 minutes.

Ingredients needed are:

  • 1 lb. small potatoes (about 2″ across – red or Yukon work fine)
  • Olive oil
  • Kosher salt
  • Sliced cheese (any thing of your choice, like Colby Jack), cut into small squares

For the toppings:

  • Light sour cream
  • Cooked bacon, chopped
  • Sliced green onions

Method:

  1. Preheat the oven to 400°F. Place a large baking sheet with aluminum foil.
  2. With the help of a knife, make several cuts through each potato. Avoid cutting the potato, down the length.
  3. Place the potatoes on a baking sheet, and rub with olive oil and sprinkle some salt on it.
  4. Bake for 30 minutes, until the potatoes are tender. Now, place sliced cheese squares, anything of your choice, in between a few of the cuts on each potato.
  5. Keep in the oven, for another 5-10 additional minutes, until the cheese has completely melted.
  6. Allow the potato bites to cool for about 10 minutes and you can add your favorite desired toppings like sour cream, bacon and green onions.
  7. Your Crispy Loaded Hasselback Potato Bites, are now ready to be served warm or at room temperature.

3. Pizzadillas:

Total time: 35 minutes; Preparation time: 15 minutes; Cooking time: 20 minutes.

Ingredients needed are:

  • butter in pan
  • 8 (6-inch) flour tortillas (you can also use whole wheat tortillas)
  • 2 cups pizza sauce, divided
  • 2 cups fancy-shredded part skim mozzarella cheese, divided
  • 2 teaspoons dried oregano, divided
  • 1/2 cup pepperoni minis, divided

You can also make the Caprese Pizzadillas:

Ingredients needed are:

  • butter in pan
  • 8 (6-inch) flour tortillas (you can also use whole wheat tortillas)
  • 2 cups fancy-shredded part skim mozzarella cheese, divided
  • 2 cups halved cherry tomatoes, divided
  • 8 fresh basil leaves, cut into ribbons, divided

Method:

  1. Place an iron skillet or a frying pan, over a medium flame.
  2. Add a tablespoon of butter to melt and add about 8 tortillas, each of 6-inch shape to it. If you do not prefer the flour tortillas, you can use wheat instead.
  3. Spread 1/8 of pizza sauce over each tortilla and distribute the toppings evenly over each flour tortilla. Add cheese and sprinkle dried oregano and add pepperoni as toppings.
  4. Transfer each tortilla to skillet, with toppings facing upside. Cook for about 30 seconds, or until cheese starts to melt.
  5. Fold one side of the tortilla over the other, using a spatula and cook for a few more seconds. Repeat the same process and continue to cook, until they turn light brown in color.
  6. Remove the tortillas from the skillet, and transfer to a paper towel-lined plate.
  7. Continue to cook the remaining tortillas and add more butter to it if required.
  8. Serve immediately when hot.
  9. For the preparation of Caprese Pizzadillas, the method is same as pepperoni, instead you add the halved tomatoes and fresh basil leaves as toppings. This recipe, is generally served as an appetizer, and can have best with Marinara Sauce.

4. Crispy Pickles with Ranch Dip

Total time: 40 minutes; Preparation time: 20 minutes.

Ingredients needed are:

  • 2 large egg whites
  • 1 cup (metric) cornmeal
  • 10 half-sour pickles
  • 3/4 cup (metric) low fat sour cream
  • 1 tbsp. Buttermilk
  • 1 tbsp. Finely chopped chives
  • 1 tbsp. Finely chopped dill

Method:

  1. Preheat the oven to 425 degrees F. Place a large rimmed baking sheet with aluminum foil.
  2. In one of the shallow bowl, beat the egg whites and in another add the cornmeal separately.
  3. Cut each crispy pickle, into 4 spears, and pat dry with paper towels.
  4. Let the spears dip in egg whites, then coat them with cornmeal, and transfer to the prepared baking sheet.
  5. Fry the pickles upside down, until they turn golden brown around the edges for a time period of about 18-22 minutes.
  6. In the mean time, while the pickles are getting ready to be baked, whisk the sour cream, buttermilk, chives and dill, together in a medium bowl.
  7. Now, your pickles are ready to be served.
